📢 New Coffee Alert 📢
We are delighted to announce that we are now offering our first Anaerobic coffee sourced from our friends @genuineorigin. Hailing from Jinotega Nicaragua, @labastillacoffee grow and process their own coffees.
In this particular micro-lot, the ripe coffee cherries are picked, and the seeds are extracted with some of the fruit pulp remaining in tact. The pulp-covered coffee seeds are sealed into tanks with the oxygen removed. Yeast is then added to ferment the fruit for removal before the drying stage.
I choose to do a light roast with this coffee. The process and light roast level give this coffee a complex tasting profile with notes of raspberry, cranberry, and red wine.
